Autumn and winter are by far my favourite time of the year. I love everything about them. The autumn colours, the warm blankets, listing to the sound of the rain, and of course all of the earthy, seasonal produce.
By now you all know I’m not one for creating fancy recipes, but that I prefer to keep it simple and as easy as possible while making sure it’s loaded with all the nutritious goodies.
This meal is exactly that, and it is also 100% AIP compliant.
So here we go…..
- 1 pack of organic chicken drumsticks
- 1/2 butternut pumpkin
- 1 sweet potato
- 2 large beetroots
- 1 bulb of garlic
- 1/2 cup bone broth
- Seasoning to taste: rosemary, oregano, thyme and salt
- Dice up all the veggies
- Place drumsticks and veggies into a large, oven safe pot
- Add seasoning
- Add bone broth
- Place in a preheated oven at 180 and let it bake for 45-60 minutes
That’s it, super simple. This meal should give you 4 servings and makes for great leftovers also.
